the word but in these sentences

I don't understand these sentences because of the word but.
-everything but the girl
-nothing but the best

  • In both sentences the conjunction but has the same meaning, i.e.
    with the exception of, apart from, except, save.


    everything but the girl > everything except the girl.


    I'll take nothing but the best > I'll take nothing except the best > I will take only the best, nothing else.
  • That means:


    everything but = not the girl, but all the other ones
    nothing but = only the best, but not the average
